How We Scaled Mole Production Without Losing the Family Recipe

When we started fielding our first requests from distributors, the question we heard most was always the same: does the flavor hold up when you produce at higher volume? It's a fair question. Most industrial moles trade flavor depth for consistency and cost. We set out not to make that trade.
The starting point: the recipe, not a formula
Our mole recipe comes from the family kitchen, cooked in a clay pot for generations. When we scaled, the first decision was to protect every step that gives it depth — toasting the chiles, tempering the spices, the cook time — rather than replace it with industrial shortcuts like flavorings or concentrated pastes.
That meant redesigning the process, not the recipe.
What changes (and what doesn't) when you scale
- Toasting and grinding: we still toast the chiles and seeds in controlled batches, now with equipment that replicates the same heat profile we used at home, at greater scale.
- Cook times: we don't compress them. Mole needs the time it needs.
- Quality control: every batch is tested against a reference flavor profile before it leaves the plant.
- Traceability: every input — chiles, spices, cacao — has a documented supplier and lot, something that's now non-negotiable for foodservice and retail partners.
